What are the ingredients I need to make Chicken Biryani?

·         Chicken                                                         ½ kg
·         Basmati rice                                                   ½ kg
·         Pudina paste                                                   ½ cup
·         Ginger and garlic paste                                    ½ cup
·          Curd                                                              2 cup
·          Chilies powder                                               3tsp
·          Saffron                                                          1 pinch
·         Milk                                                               ¼ tsp
·         Turmeric powder                                            ½ tsp
·         Coriander and green chilies paste                    ¼  cup
·          Ghee                                                              3 tsp
·          Oil                                                                 1 cup
·         Garam masala powder                                    1tsp
·         Shahjeera                                                        2 tsp
·         Salt to taste
·         Chopped pudina (mint leaves)                         1 tsp
·         Chopped coriander                                         3 tsp
·         Green chilies                                                   6, slit
·         Maida dough                                                   1 cup
·         Golden fried sliced onions                               1 ½ cup

What is the method to prepare Dum Ki Biryani?

  • Take a frying pan, add chopped onion and fry till its golden brown and crisp. 
  • Prefer leg pieces in chicken and wash scrupulously. 
  • Take a heavy bottomed vessel, add chicken, crushed fried onion, mint leaves paste, curd, coriander & chili paste, salt, ginger – garlic paste, turmeric powder, chili powder, oil and slit green chilies. Mix well and marinate it for 3 – 6 hrs.
  • Boil marinated chicken at low flame for 15 minutes and keep it aside. 
  • Wash basmati rice and cook it in hot water mixed with garam masala powder, elaichi, salt and shahjeera till half done and drain water. Keep rice aside. 
  • Now take a wide vessel and layer chicken at the bottom and then add basmati rice. Make sure that top layer is rice and bottom layer is chicken. 
  • Pour remaining chicken gravy on rice and sprinkle golden fried onions and saffron soaked in milk, ghee, chopped mint leaves and coriander leaves. 
  • Cover vessel and seal it with Maida dough then put a heavy water vessel on the top of lid to evade burning and cook on low flame for 1hour. 
  • Serve hot with raitha, mrichi salan and salads.

In contrast to traditional hyderabadi biryani, here we will use tomato puree also. In traditional style of biryani rice and chicken both are cooked separately, where as in this Andhra style both are cooked together and also some extra ingredients are used. What are the ingredients I need to make Andhra Chicken Biryani?

·         Basmati Rice                           2 cups
·         Chicken                                   ½ kg
·         Oil                                           3 tbsp
·         Mint Leaves                            1 bunch
·         Fenugreek Leaves (Methi)      1 bunch
·         Coriander Leaves                    1 bunch
·         Water                                      4 cups
·         Green chilies                           12, small sized
·         Onion                                      4
·         Tomato                                    2
·         Cardamom                              2
·         Cloves                                     6
·         Staranaise                                1
·         Big Elaichi                              1
·         Bay leaves                               1
·         Cinnamon                                4
·         Ginger – garlic paste               1 tbsp
·         Salt to  taste

What is the method to prepare Andhra Chicken Biryani?

·         Soak rice for 30 minutes and drain it. Soaking helps rice to cook early and easily
·         Take a pan, pour oil and heat it
·         Add cardamom, cloves, star anaise, bay leaves, big elaichi, cinnamon stick, onion and         ginger – garlic paste
·         Sauté, till the onions turns to golden brown
·         Add chopped tomatoes and cook till oil separates and tomatoes blend in with masala
·         Now add chicken and cook until it turns white and oil separates from it
·         This may take 15 minutes
·         Add 1 tbsp of salt to chicken while coking
·         Grind mint leaves, coriander leaves, methi leaves and green chilies together in ½ cup         water
·         Add this paste to the chicken and cook for more 5 – 8 minutes
·         Add 3 ½ cup of water and ½ - 1 tbsp of salt to this mixture and bring it to boil
·         Now add the soaked rice, cover and cook for 15 minutes or till the rice is cooked.
·         Serve hot!!

Tips

·         Do not make mint, methi and coriander too watery
·         Green paste should be cooked till it turns to darker green
·         All cooking should be done on medium to low flame to avoid biryani from getting burn
·         If you find the chicken mixture too spicy, you can add half a cup of yogurt to leaves                  and chili mixture.

What are the ingredients I need to make Hyderabadi Mutton Biryani?

·         Mutton                       1 kg
·         Rice                           ½ kg
·         Curd                          ½ kg
·         Onion                        250 gm
·         Ginger-garlic            2 tbsp, paste
·         Green chilli paste     1 tsp
·         Red Chilli                 1 tbsp
·         Black pepper            ½ tsp
·         Saffron                     few threads
·         Ghee                         100 gm
·         Refined oil               100 gm
·         Clove                       8 pieces
·         Elaichi                     10 pieces
·         Bay leaves               4 – 5
·         Shah zeera                ½ tsp
·         Mint leaves               2 cups
·         Garam masala           1tsp
·         Lemon                       1
·         Papaya                       1 tsp
·         Salt to taste

What is the method to prepare Hyderabadi Mutton Biryani?

·         Dissolve saffron threads in 2 tbsp of milk
·         Rinse mutton thoroughly and chop it into fine pieces
·         Soak rice in water
·         Chop the onion in fine slices
·         Pour ghee & oil in frying pan, fry onion until golden brown. Crush fried onion
·         Addpapaya paste, crushed onion, curd, ginger-garlic paste, red chilli, green chilli, garam masala powder, haldi (turmeric), salt, mint leaves, lemon and coriander to mutton and marinate for 1 hour.
·         Pour water in a vessel, boil it. Add shah zeera, Darchini (cinnamon sticks), clove & elaichi to it
·         Add rice in boiling water, add salt and stir well
·         When rice is partially cooked, put off the stove, strain the water & spread rice on wide plate
·         take a vessel, layer marinated mutton, then add rice over mutton layer
·         pour oil onto the rice which is remained after frying onion, sprinkle dissolved saffron, coriander leaves, fried onion slices and green chillies on it
·         Cover the vessel, and place a heavy weight over the lid, if possible seal edge with wheat dough so that steam should not come out.
·         Cook on high flame for 10 min
·         Reduce the flame to low & steam for 20 – 25 min
·         Turn off flame, let it stand for 10 min
·         Add lemon, mix gently & serve hot with dahi ki chutney or mirchi ka salan!!!

Tips
More marinating time, the more tasty your biryani will be.
